This Chardonnay was crafted with old world style Chardonnay in mind. Focusing on producing a Chardonnay that is citrus driven, brimming with acidity, and a layering of minerality from the terroir of the vineyard and lees. Painstaking steps were taken to protect this wine from oxygen throughout the entirety of its life before bottle. When Pinot Noir is being made, you are making most of your important decisions in a 2 week window. It is a sprint. Crafting complex Chardonnays that can have the same lifespan of a Pinot Noir is more like running a marathon. Every few months you make a decision to hone the wine slowly and meticulously. This chardonnay was fully fermented through sugar and malic acid in the barrel. After reaching the textures that I wanted, I racked the wine with all of its lees to a stainless steel tank in August of 2021. The purpose being that I wanted to fully homogenize all of the different stories each barrel had into one beautiful epic poem. The Chardonnay stayed completely protected from oxygen throughout the 2021 harvest and was bottled in March of 2022. Paden West
